Masanori Tomikawa started working in Yamazato Restaurant’s kitchen since 1984. He was trained by Mr. Oshima for years, due to this long period they realized an intense working relationship. He has been working for 23 years in the kitchen of Yamazato. From 2001 until 2005 Tomikawa returned to Japan to acquire extra knowledge and experience. Since March 2010, Masanori Tomikawa has taken over day-to-day management from Mr. Oshima and is responsible for the traditional Japanese Yamazato Restaurant and Teppanyaki Restaurant Sazanka.
More than 50 Japanese specialities are prepared by the skilful hands of Executive Chef and Manager Tomikawa and his team. All fish and vegetables come from the waters and soil in Holland or elsewhere in Europe with a guarantee of perfect freshness. If necessary, certain items are flown in directly from Japan with special care.
Tomikawa is continuing the Kaiseki tradition established by Oshima. Tomikawa’s strength is the ability to develop new innovative techniques inline with the traditional character and high quality level of Yamazato. “Guests will enjoy the culinary experience even more when attention is paid to the presentation of the dishes.”
When Oshima came to the Netherlands in 1971, he had only one desire: to acquaint as many Dutch people and other Europeans as possible with Japanese cuisine. Authentic Japanese cuisine that is, because Oshima insists on honouring traditional cultural values. Tomikawa is well aware of the importance of high-quality fresh ingredients and the presentation of the dishes in Japanese cuisine. This is clearly to be discerned both in their cooking and in the management of the thirty well-trained Japanese cooks.
